Pressed from organic olives grown on lovely coastal town named Pylos, near Kalamata, on the tip of the Peleponnese Peninsula, our oil is crafted entirely from Koroneiki olives, a variety that has been grown in Greece for over 3,000 years. These olives yield only tiny fruit from a tree that is difficult to cultivate, making our olive oil exquisite and precious. You will taste the difference that comes from each hand-pressed olive grown only by our selective olive producer, harvested in the traditional method which prevents damage to the olive so that each olive is first broken open during our advanced pressing process to release the ultimate flavor for your olive oil. These olives are picked when they first change color so that their antioxidant level is at its peak. Our New World pressing process is cold-pressed within 24 hours to ensure the highest quality oil available on the market. This oil is very stable, and a shelf life of 2 years. Ten pounds of olives go into crafting one liter of our oil. Our oil has a high polyphenol count with a smooth flavor and exceptional quality and character. It has hints of artichoke, green apple, fresh grass, and subtle almond notes with a light peppery finish. This flavor profile makes it ideal for raw presentations in dipping oils and dressings. It pairs well with balsamic vinegars (especially of the sweeter variety), and citrus. You'll love using this as a finishing oil on soups, pastas, vegetables, meats, and plating fine dishes.
