Like all washed rind cheese, Epoisses is periodically washed during its aging period to allow development of the typcial orange-red rind and pungent aroma. What sets Epoisses apart is the use of marc de Bourgogne, the local brandy, for the wash. This gives the cheese a unique, fruity nuance. Aged 5-6 weeks, the cheese becomes pudding-like in texture and a flavor with notes of roasted nuts, butter, hearty meats. Our Epoisses is selected by affineur, Rodolphe Le Meunier who has been honored with the MOF, Meilleur Ouvrier de France. This esteemed award is only given to craftsmen at the top of their field.
